fixes #4730

@sgibson91 I'm not super confident about the commands and steps 😅 Would be great to do another end-to-end migration to test if these steps work or whether we need to change anything in the docs.

@sunu This looks good enough as a first pass! We can have a task to refine these docs when we migrate prod :)

I have pushed a few commits which are mostly to do with formatting. I think the one step that's missing is before we do all this, we need to provision the volume! So that will be covering the terraform steps. Are you good to add that section?
