Triage/update tickets on the current board

Now that we are using the github tickets to determine the scope of work of core contributors, we need to do some cleanup & updates, as well as create tickets that are currently being worked on, but missing.

Just a note: there are relevant tickets across all repos. They could be simply brought into the board. Here's one of mine as an example.

I am doing a pass on the tickets from the wg-coordination project, and I have re-created the project to monitor the tickets, which will be used as the basis for the contributors meeting agendas: https://github.com/orgs/openedx/projects/62/views/1

I have also created a ticket to give broader rights to core contributors to it: openedx/axim-engineering#1009
