Consider enumerating all composed configuration mixins instead of using ConfigMixin

This would allow downstreams to easily jettison specific modules of configuration from their ejected projects, and moves the "composability" from happening inside composed-configuration, into each project. I don't know if this is the right way forward, but I'd like to discuss.
